Piri Piri Marinade
I am a fan of HOT HOT! A home version of the dish that we cannot currently go out to eat at our local Nando's.

Catherine's Piri Piri Marinade
Ingredients:
- 1 tablespoon of Smoked Paprika
- 3 generous tablespoons of Olive Oil
- Juice of 1 whole lemon
- A sprinkle of Organic Sea Salt
- A sprinkle of black pepper
- 2 cloves of garlic
- 1 teaspoon of Chilli Flakes
Method:
Using a blender first add the garlic and blend, then add your lemon juice (use only half if you plan to cook straight away), Organic Sea Salt and pepper, blend again. Next add the olive oil, Smoked Paprika and Chilli Flakes and continue to pulse your mixture until fully blended.
Taste for seasoning and add more Chilli Flakes for a hotter sauce, or salt and pepper, if you want. You can also add a little sugar for a bit of sweetness in your sauce.
"What next" ... I hear you say
Place your chicken legs and thighs in a dish then smoother all over with your Piri Piri marinade. Cover and place in the fridge overnight. The following day take your chicken our of the fridge and place it on to a baking tray to cook in the oven on 190 degrees celsius for approx 30 - 35 minutes until cooked through and the skin is all crispy. YUMMM!
