Mixed Meat Cajun Fajitas

I just love making these! There is something about building the tortilla wraps at the end and just getting stuck in!

Catherine's Mixed Meat Cajun Fajitas


  • 1 sliced chicken breast
  • 1 sliced pork chop
  • 1 sliced minute steak beef
  • 1 red onion, finely sliced
  • 1 sliced red pepper
  • 1 sliced green pepper
  • 2 tablespoons of Cajun Spice
  • 1 teaspoon of Thyme
  • 4 tablespoons of olive oil
  • 2 crushed garlic cloves
  • 1 lime, juiced 
  • 1 teaspoon of Chilli Flakes (optional)
  • 1 pinch of Organic Sea Salt 


Step 1

Mix your Cajun Spice, Thyme, crushed garlic, Chilli Flakes, 4 tablespoons of olive oil and the juice of you lime together to create a marinade in a bowl with a big pinch of your Organic Sea Salt

Step 2

Take your sliced chicken, pork and beef along with your sliced peppers and onion and mix this through your marinade.

Step 3

Heat a pan until hot and add your mixture. Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect.

Step 4

Ensure your meat is cooked through and then serve! 

Serve with warm tortillas, Mexican style rice, grated cheese, guacamole and sour cream! YUM!
