Hearty Slow Cooker Beef Stew

This is another slow cooker recipe that I love to do as the meat cooked this way is so tender after! This recipe is packed full of flavour and adding the Cajun Spice might seem unusual but trust me .. it is so tasty!!

Catherine's Hearty Slow Cooker Beef Stew

Ingredients: 

  • 1 white onion chopped
  • 2 celery sticks finely chopped
  • 3 carrots halved and cut into chunks
  • 2 tablespoons of olive oil
  • 2 tablespoons of Thyme
  • 1 tablespoon of Cajun Spice
  • 2 tablespoons of tomato purée
  • 2 beef stock cubes or stock pots 
  • 900g of braising diced beef
  • 600 ml boiling water 

Method:

Step 1 

Add 1 tablespoon of olive oil to a pan and fry off the onion and celery on a low heat until softened.

Step 2 

Add the carrots, Cajun Spice and Thyme, mix well and fry off for approx 2 mins. Then stir in the purée and Worcestershire sauce, add 600ml boiling water mix well then tip everything into your slow cooker.

Step 3

Crumble in the stock cubes and stir. 

Step 4 

Using the same pan brown off the beef, you may need to do this in batches depending on the size of your pan. Tip each batch into the slow cooker. Cook on low for 8-10 hrs, or on high for 4 hrs.

Serve up with a sprinkle of fresh parsley and creamy mash! YUM!
