Curried Beans ... so simple!

This is a really simple recipe that's great for serving up as vegetarian main or side dish and why not give it a go at breakfast!

Catherine's Curried Beans 

Ingredients:

  • 1 tablespoon of olive oil vegetable oil
  • 1 finely chopped onion 
  • 2 crushed garlic cloves
  • 3 tablespoons of Garam Masala 
  • 1 teaspoon of Turmeric
  • 400g can chopped tomatoes
  • 400g can kidney beans - keep the water 

Method: 

Step 1

Heat the olive oil in a large frying pan over a low-medium heat. Add the onion and cook slowly until softened then add the garlic and cook for a further 2 minutes. 

Step 2 

Add the Garam Masala and Turmeric to the pan and cook for 1 minute. Add your chopped tomatoes and kidney beans including the water from the tin and the bring the mixture to the boil. 

Step 3

Turn down the heat and simmer for 15 mins until the curry is nice and thick.

Serve with basmati rice or on toast with a fried egg for breakfast!
